07 - 1/4 tsp freshly ground black pepper

→ Pasta

08 - 10 oz short pasta (penne, fusilli, or rotini)

→ Vegetables & Add-ins

09 - 1 cup cherry tomatoes, halved
10 - 1 cup cucumber, diced
11 - 1/2 cup Kalamata olives, pitted and sliced
12 - 1/2 small red onion, thinly sliced
13 - 3.5 oz feta cheese, crumbled
14 - 2 tbsp fresh parsley, chopped

→ Dressing

15 - 2 tbsp extra virgin olive oil
16 - 1 tbsp red wine vinegar
17 - 1 tsp Dijon mustard
18 - 1/2 tsp dried oregano
19 - Salt and pepper, to taste

# How-To:

01 - Combine olive oil, lemon zest, lemon juice, garlic, oregano, salt, and pepper in a bowl. Add chicken breasts and marinate for at least 15 minutes, up to 2 hours for enhanced flavor.
02 - Cook pasta according to package instructions until al dente. Drain and rinse with cold water to stop cooking and cool the pasta.
03 - Heat a grill pan or skillet over medium heat. Remove chicken from marinade and cook for 6-7 minutes per side until fully cooked through. Let rest for 5 minutes, then slice thinly.
04 - In a large mixing bowl, combine cooled pasta, cherry tomatoes, cucumber, olives, and red onion.
05 - Whisk together extra virgin olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper in a small bowl until emulsified.
06 - Pour dressing over pasta mixture and toss to coat evenly. Top with sliced chicken, crumbled feta, and fresh parsley. Serve immediately or chill for later.

# Expert Advice:

01 -
  • Everything comes together in under 40 minutes, making it perfect for those weeknights when you want something special but dont have hours to spend cooking
  • The combination of warm marinated chicken against cool crisp vegetables creates those perfect temperature contrasts that make each bite interesting
  • Leftovers somehow taste even better the next day as all those Mediterranean flavors meld together
02 -
  • Rinsing the pasta with cold water is essential, otherwise the residual heat will make the cherry tomatoes mushy and the herbs wilt
  • Letting the chicken rest for at least 5 minutes after cooking keeps it juicy rather than drying out when sliced
  • The dressing needs to be whisked vigorously until it thickens slightly or it will pool at the bottom of the bowl
03 -
  • Pound the chicken to even thickness so it cooks evenly without drying out at the edges
  • Room temperature ingredients absorb dressing better than cold ones straight from the refrigerator
